Healthy, Sugarless & Gluten free banana cake recipe

What I like the most about this recipe, other than being Gluten free, is that it doesn’t require added sugar, yeast or butter! And the result is a super moist and nutritious banana cake that is easily prepared without even using a mixer!
It would make a healthy breakfast for the kids or a delicious afternoon snack for you. This Banana cake recipe will satisfy your sweet tooth without any added sugar and with only 130kcal per piece! It also contains good amounts of Omega 3, Iron, Vitamin E and Fibre.
The ‘Bites of Delight’ gluten free cake ready mix is also available in chocolate flavor and could be substituted in this recipe to make a chocolate banana cake. Preparation time: 10 minutes Cooking time: 45 minutes Yield: 1 loaf
Ingredients:
- 1 ‘Bites of delight’ Gluten free vanilla cake ready mix
- 3 ripe bananas
- 1 egg
- 1 tablespoon flaxseeds
- 1/2 cup pitted dates
- 1/2 cup walnuts
Method:
- Preheat the oven to 180ºC and butter up or spread with tahini a medium sized loaf pan.
- In a mixing bowl, mash the bananas until completely smooth.
- Mix in the ‘Bites of Delight’ Gluten free vanilla cake ready mix .
- Stir in the beaten egg.
- Add the pitted dates, walnuts and flaxseeds. Fold the batter gently.
- Pour the batter into the prepared loaf pan. Bake for 45 minutes or until a toothpick inserted into the centre comes out clean.
- Remove from oven and let cool before serving. Et voilà!
